Zucchini Brownies

Ingredients

  • ½ C vegetable oil
  • 1 ½ C Pioneer® Sugar
  • 2 tsp. vanilla extract
  • 2 C all-purpose flour
  • ½ C unsweetened cocoa powder
  • 1 ½ tsp. baking soda
  • 1 tsp. salt
  • 2 C zucchini, peeled & shredded
  • ½ C walnuts, chopped

Frosting:

  • 6 T unsweetened cocoa powder
  • ¼ C margarine
  • 2 C Pioneer® Confectioners Powdered Sugar
  • ¼ C milk
  • ½ tsp. vanilla extract

Directions

  1. Preheat oven to 350° F. Grease and flour a 9 x 13-inch baking pan; set aside.
  2. In a large bowl, mix together the oil, Pioneer® Sugar and vanilla until well blended.
  3. In a separate bowl combine the flour, cocoa, baking soda and salt; stir into the sugar mixture.
  4. Peel and shred zucchini. Fold the zucchini into batter immediately. Add walnuts; stir. Spread evenly into the prepared pan.
  5. Bake for 25 to 30 minutes or until brownies spring back when gently touched in the center.

Frosting:

  1. Melt together the cocoa and margarine; set aside to cool.
  2. In a medium bowl, blend together the Pioneer® Confectioners Powdered Sugar, milk and vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.
