Walnut Tea Squares

Ingredients

Bottom Crust:

  • ¾ C butter, softened
  • ⅓ C Pioneer® Sugar
  • 2 egg yolks, beaten
  • 1 ½ C flour, sifted
  • 1 tsp. vanilla

Topping:

  • 2 T flour
  • ¼ tsp. baking powder
  • 1 ½ C Pioneer® Golden Light Brown Sugar
  • ¼ tsp. salt
  • 1 C shredded coconut (moistened with teaspoon of milk)
  • 2 eggs, blended but not frothy
  • 1 tsp. vanilla
  • ½ C walnuts, finely chopped

Directions

  1. Preheat oven to 350° F.

Bottom Crust:

  1. In a large mixing bowl cream butter well. Mix together Pioneer® Sugar, egg yolks, flour and vanilla. Blend into the butter. Pat mixture into an ungreased 9 x 9-inch baking pan. Bake for 12 minutes or until lightly browned.

Topping:

  1. In a mixing bowl add flour, baking powder, Pioneer® Golden Light Brown Sugar, salt and coconut; stir together. Add egg mixture, vanilla and walnuts. Mix all ingredients until well blended. Spread mixture over baked crust. Return to the oven and bake for 18-20 minutes or until golden brown. Remove and cool. Cut into 1-inch squares and serve.
