Ingredients

  • 1¼ C flour
  • ½ Pioneer® Golden Light Brown Sugar, packed
  • ¼ C vegetable shortening
  • ¼ C unsalted butter
  • 1 C pecans, chopped: divided
  • 1/3 C flaked coconut

Apple Pie Filling:

  • 6 C Michigan Jonagold apples, sliced
  • 1 T lemon juice
  • 1 C water
  • 1 C Michigan apple cider
  • ½ C Pioneer® Sugar
  • ½ C Pioneer® Golden Light Brown Sugar
  • ¼ C cornstarch
  • 1 tsp cinnamon
  • ¼ tsp allspice
  • 1/8 tsp cloves
  • ¼ tsp nutmeg
  • ¼ tsp salt

Filling:

  • 2 pkgs. (8 oz. each) cream cheese, softened
  • 2/3 C Pioneer® Sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 T lavender buds
  • 1 recipe Apple Pie Filling

Optional:

  • To decorate – Whipped cream and additional lavender

Directions

  1. Preheat oven to 350° F. Grease a 13×9-inch baking pan; set aside.

Crust:

  1. In a bowl combine flour and Pioneer® Golden Light Brown Sugar; cut in shortening and butter until fine crumbs form. Stir in ½ cup nuts and coconut. Reserve remaining crumb mixture for topping.
  2. Press the mixture into the bottom of prepared pan; bake for 12-15 minutes or until lightly browned.

Apple Pie Filling:

  1. In a large bowl, toss apples with lemon juice; set aside.
  2. Pour water and cider in a large kettle and heat over medium heat. Combine sugars, cornstarch, spices and salt and add to water and cider, stir well. Bring to a boil and boil for 2 minutes, stirring constantly. Add apples and return to a boil. Reduce heat; cover and simmer until apples are tender about 6 minutes.

Filling:

  1. Beat the cream cheese, Pioneer® Sugar, eggs and vanilla in mixing bowl until smooth. Spread over the hot crust; sprinkle with lavender buds; bake 15 minutes.
  2. Then spread Apple Pie filling on top of this mixture and sprinkle with reserved crumb topping and additional pecans.
  3. Bake 15 more minutes. Cool. Cut into 2-inch squares.

Optional:

  1. Decorate each square with whipped cream and additional lavender buds.
