Truffle Topped Holiday Brownies

Ingredients

Brownies:

  • 2 C walnuts (lightly toasted), coarsely chopped
  • 6 oz. chocolate, chopped (*premium quality)
  • 1 C all-purpose flour
  • ½ C unsweetened cocoa powder (*premium quality)
  • ¼ tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ tsp. salt
  • ¾ C unsalted butter, softened
  • 1 ½ C Pioneer® Sugar
  • 4 large eggs
  • 1 tsp. vanilla

Topping:

  • 12 oz. chocolate, chopped (*premium quality)
  • 1 can (14 oz.) sweetened condensed milk
  • 2 T unsalted butter
  • ½ tsp. vanilla

Directions

  1. Position a rack in the center of the oven and preheat to 350° F. Lightly grease a 9 x 13-inch baking pan; set aside.
  2. Lightly toast walnuts in microwave for 1 minute, stir and microwave 1 more minute; set aside. Melt chocolate in microwave or in double boiler, when almost melted remove from heat and set aside to cool to room temperature. Stir several times while cooling to blend evenly.
  3. In a mixing bowl sift the flour with the cocoa, baking powder, baking soda and salt. Beat the butter and Pioneer® Sugar together on medium speed for about 1 minute or until light colored. Add eggs and vanilla; beat another minute or until well blended. With a rubber spatula, fold the flour mixture into the wet mixture, add the melted chocolate and stir until combined. Stir in the nuts. Spread batter evenly into prepared pan and bake for 30-35 minutes or until tester inserted in center comes out somewhat moist.

While brownies bake, prepare the topping as follows:

  1. in a glass bowl, stir the chopped chocolate, milk and butter together and microwave for one minute. Stir and microwave another minute. Remove and add vanilla. Stir until smooth and spread evenly over hot brownies. Allow to cool completely on rack before cutting and removing from pan.

*Premium quality chocolate: Use Valrohna, Scharffen-Berger, Lindt, or Callebaut dark chocolate. (Available at Whole Foods, Williams-Sonoma, Papa Joes or other fine food stores.)
