Tropical Cake Bars

Crust Ingredients

  • ½ C butter, melted (1 stick)
  • 1 box yellow cake mix; reserving ¼ cup
  • 1 egg

Batter Ingredients:

  • 2 eggs
  • 1 tsp lemon juice
  • 1 tsp rum extract
  • ¼ C reserved yellow cake mix
  • 1 C Pioneer® Sugar
  • 1 can (20 oz.) crushed pineapple, drained*
  • 1 C sweetened coconut flakes

Icing Ingredients:

  • 1 C Pioneer® Confectioners Powdered Sugar
  • 2 T reserved pineapple juice

Directions

  1. Preheat oven to 350° F. Spray a glass 9 x 13-inch baking pan with cooking spray. (If you have cooking spray with flour that works too). Set aside.

Crust Directions:

  1. In a mixing bowl add butter and melt in the microwave. Remove and add the cake mix, butter and egg. Mix with spatula and spread in bottom of prepared baking dish.
  2. Bake for 10 minutes. Remove and let set for about 10 minutes.

Batter Directions:

  1. In mixing bowl add eggs, lemon juice, rum extract, reserved cake mix, Pioneer® Sugar, pineapple, and coconut. Mix well.
  2. Spread batter over cooked crust. Bake for 25 – 30 minutes. Remove from oven and let cool.

Icing Directions:

  1. In a small mixing bowl add Pioneer® Confectioners Powdered Sugar and pineapple juice. Blend until smooth.
  2. Using a plastic sandwich bag, drape over a glass and add the icing. Remove the plastic bag from the glass and push icing into one corner, twist to release air. Snip off a tiny bit of the corner of the bag. Drizzle the icing over cooled bars.
 

Cooks Note

When draining your crushed pineapple, be sure to reserve the juice. You may also substitute vanilla if you do not have rum extract. The rum extract just gives it a ‘tropical’ flair.
