Cookie Ingredients

  • 1 C margarine
  • 1 ½ Cs Pioneer® Sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 2/3 C all-purpose flour
  • ½ C cocoa
  • 2 T instant coffee granules
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 2 C chocolate chips
  • 1 C nuts (pecans or walnuts)

Peanut Butter Topping Ingredients:

  • ½ C butter
  • 1 C creamy peanut butter
  • 1 lb. Pioneer® Confectioners Powdered Sugar
  • ¼ C milk
  • ½ tsp. vanilla

Fudge Topping Ingredients:

  • ½ C butter or margarine
  • 5 T unsweetened cocoa powder
  • 6 T milk
  • 1 lb. Pioneer® Confectioners Powdered Sugar
  • 1 tsp. vanilla

Cookie Directions

  1. Preheat oven to 350° F. Place on parchment paper on a cookie sheet; set aside.
  2. Cream the margarine and Pioneer® Sugar together; add eggs and vanilla. Combine the flour, cocoa, coffee, baking soda, baking powder and salt. Whisk together. Add the flour mix to the creamy mix until it is all mixed together. Roll into balls or use a cookie scoop.
  3. Bake for 9 minutes. Let cool.

PB Topping Directions:

  1. Beat the butter until fluffy. Add peanut butter, ½ C of Pioneer® Confectioners Powdered Sugar, milk and vanilla. Gradually beat in the remaining sugar ½ cup at a time.
  2. Frost cooled cookies.

Fudge Topping Directions:

  1. Melt the butter in a saucepan. Add cocoa and milk. Bring to a boil. Add Pioneer® Confectioners Powdered Sugar and vanilla.
  2. Spread on top of the peanut butter topping on cookie.
