Ingredients

  • 2 C Jiffy® corn bread, prepared & crumbled
  • 1 can (10 oz.) red enchilada sauce, divided
  • ½ tsp. salt
  • 1 ½ lbs. ground round
  • 1 small can tomato sauce
  • 1 tsp. Pioneer® Golden Light Brown Sugar
  • ½ – 1 C Monterey Jack cheese, shredded

Directions

  1. Preheat oven to 350° F.
  2. Combine the cornbread crumbs, ½ cup enchilada sauce and salt. Add the beef and mix well. Shape into 1-inch balls. Place in a shallow baking pan.
  3. Bake, uncovered for 18-20 minutes, turning once or twice. Drain well.
  4. In a sauce pan, heat the tomato sauce, Pioneer® Golden Light Brown Sugar and remaining enchilada sauce. Place the meatballs in a clean 9 x 13-inch baking dish, sprayed with cooking oil. Pour the sauce over the meatballs.
  5. Bake 10 minutes, then cover with cheese and bake another 10-15 minutes. Serve with toasted pita chips or roll into flour tortillas for a Mexican Hoagie!
