Sweet Apple Pizza Cookie

Ingredients

  • ¾ C butter or margarine, softened
  • ¾ C Pioneer® Sugar
  • ½ C Pioneer® Golden Light Brown Sugar, firmly packed
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 ½ C all-purpose flour
  • 1 ½ tsp. ground cinnamon
  • ¾ tsp. baking soda
  • ¾ tsp. salt
  • 1 C apple, shredded (1 medium)
  • ¾ C uncooked oats

Topping:

  • 1 pkg. (6-oz.) semi-sweet chocolate chips
  • 1 C pecans, chopped
  • ½ C Pioneer® Confectioners Powdered Sugar, sifted
  • 2 tsp. milk

Directions

  1. Preheat oven to 375° F. Generously grease 14-inch round pizza pan.
  2. In large bowl beat, with electric mixer, butter, Pioneer® Sugar and Pioneer® Golden Light Brown Sugar until creamy. Beat in egg and vanilla. Add flour, cinnamon, baking soda and salt; beat until batter is smooth. Stir in apple and oats. Spread batter evenly onto pizza pan. Bake 20 to 25 minutes or until golden.

Topping Directions:

  1. Sprinkle chocolate chips onto hot cookie. Let stand 5 minutes until chips soften and look shiny. Spread with a metal spatula like frosting. Sprinkle nuts on top. Cool completely.
  2. In a small bowl combine Pioneer® Confectioners Powdered Sugar and milk; mix until smooth. Drizzle on top of pizza cookie.
