Strawberry Jam

Ingredients

  • 2 C strawberries, cleaned & hulled
  • 4 C Pioneer® Sugar
  • ¾ C water
  • 1 box (1 ¾-oz.) powdered fruit pectin

Directions

  1. In a large bowl crush strawberries with pastry blender or masher, add Pioneer® Sugar and mix well; set aside.
  2. In a small sauce pan combine the water and pectin; stir and gently bring to a boil. Boil for 1 minute, stirring constantly. Remove from heat and stir into sweetened strawberries. Continue stirring about 3 minutes. (There will be some sugar crystals remaining.)
  3. Ladle jam into clean, hot jars; seal immediately and set aside until jam is set (24 to 48 hours). Short term storage; in refrigerator for use within 2 or 3 weeks. Long term storage; in freezer for 6-8 months. Defrost in refrigerator before use.

Variations

  1. Strawberry-Mint jam Follow recipe for Strawberry Jam. Add 1 or 2 drops mint extract to each jar before filling. Stir quickly with knife to blend. Cover immediately.
  2. Strawberry-Cardamom jam Follow recipe for Strawberry Jam. Mix 2 teaspoons ground cardamom with the sugar and add to strawberries; blend well.
