Crust Ingredients

  • 1 ¼ C chocolate graham cracker crumbs
  • ¼ C Pioneer® Sugar
  • 5 T butter
  • ½ tsp. cinnamon

Filling:

  • 1 pkg. (8 oz) cream cheese, softened
  • ¼ C Pioneer® Confectioners Powdered Sugar
  • 3 T sour cream
  • 1 tsp. vanilla extract

Topping:

  • 1 ½ to 2 quarts strawberries, hulled
  • ¾ C Pioneer® Sugar
  • 3 T cornstarch
  • ¼ C water
  • 1 pkg. (3 oz) strawberry gelatin
  • ½ tsp. lemon zest

Crust Directions

  1. In a small bowl, combine graham cracker crumbs, Pioneer® Sugar, butter and cinnamon. Press into the bottom and up the sides of an ungreased 9-inch pie plate; set aside.

Filling:

  1. In a mixing bowl beat cream cheese, Pioneer® Confectioners Powdered Sugar, sour cream and vanilla until fluffy. Carefully spread over the crust.

Topping:

  1. Crush berries to make 1 cup.
  2. In a saucepan, add Pioneer® Sugar, cornstarch, water and crushed berries. Cook and stir over medium heat until mixture is clear and has thickened. Remove from heat. Add gelatin and lemon zest. (You can add a few drops of red food coloring if you want.) Cool slightly.
  3. Fill the pie crust with the remaining berries and pour the cooked berry mixture over the top. Trim pie with whipped cream or Cool Whip. Add blueberries to decorate.
