Strawberry Cake

Ingredients

Cake:

  • 1 box white cake mix
  • 1 small box strawberry gelatin
  • ¾ C oil
  • ¾ C milk
  • 4 eggs, separated
  • 1 C shredded coconut
  • 1 C pecans, chopped
  • 2 C strawberries, halved

Frosting:

  • 4 T margarine, softened
  • 3 ¾ C Pioneer® Confectioners Powdered Sugar
  • ½ strawberry cake mixture

Directions

  1. Preheat oven to 350° F. Grease and flour three 9-inch round baking pans; set aside.

Cake:

  1. Combine cake mix and gelatin in mixing bowl. Blend together by hand. Add oil, milk and egg yolks; beat just enough to mix. In small bowl mix coconut, nuts and strawberries. Add half of this mixture to batter (reserving remaining half for frosting). In a separate bowl beat egg whites until stiff but not dry; fold into batter. Pour into prepared pans. Bake 20 to 25 minutes.

Frosting:

  1. In mixing bowl beat margarine until creamy. Mix in Pioneer® Confectioners Powdered Sugar gently. Add remaining half of strawberry mixture and beat well. Apply frosting to cooled cake.
