Spinach Salad with Sweet & Sour Dressing

Ingredients

Salad:

  • 1 lb. fresh spinach
  • 1 sm. can sliced water chestnuts, drained
  • 1 can bean sprouts, drained
  • ½ lb. bacon, crisp & crumbled
  • 4 eggs, hard boiled and sliced

Dressing:

  • ¾ C Pioneer® Sugar
  • ¼ C vinegar
  • ⅓ C ketchup
  • 2 tsp. salt
  • 1 T Worcestershire sauce
  • 1 med. onion, grated
  • 1 C oil

Directions

  1. In a large bowl add spinach, water chestnuts, bean sprouts and bacon; toss together; set aside.
  2. In a blender add the Pioneer® Sugar, vinegar, ketchup, salt, sauce and onion. Blend until smooth adding the oil last. Refrigerate for several hours so flavors blend.
  3. When ready to serve add sliced eggs and dressing; toss together.
