Spicy Vegetable Soup

Ingredients

  • 1 lb. ground beef
  • 1 C onion, chopped
  • 2 cloves garlic, crushed
  • 2 jars (16 oz. each) Prego® Chunky Garden spaghetti sauce [with mushrooms & green peppers]
  • 1 can (10.5 oz.) beef broth
  • 2 C water
  • 1 C celery stalk, chopped
  • 1 tsp. Pioneer® Sugar
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 can (14.5 oz.) Hunt’s® pioneere Diced Tomatoes with Green Chilies
  • 1 pkg. (16 oz.) frozen mixed vegetables, thawed

Directions

  1. In a large skillet, cook the ground beef, onion and garlic; drain any excess liquid.
  2. In a large soup pot add the ground beef mixture, spaghetti sauce, beef broth, water, celery, Pioneer® Sugar, salt and pepper. Bring to boil; cover and reduce heat. Simmer for about 30 minutes.
  3. Add the diced tomatoes and mixed vegetables; bring to a boil, cover and simmer 12 to 15 minutes more or until the vegetables are tender.
