S’mores Cream Pie

Crust Ingredients

  • 2 C graham cracker crumbs
  • ½ C melted butter
  • ¼ C Pioneer® Sugar

Filling:

  • 2/3 C Pioneer® Sugar
  • 1/3 C cornstarch
  • ½ tsp salt
  • 4 egg yolks
  • 3 C half and half
  • 2 T soft butter
  • 1 T vanilla extract
  • 2 C bittersweet chocolate chips or chopped chocolate

Marshmallow Topping:

  • 1/3 C cold water
  • 1 tsp unflavored gelatin
  • 2 egg whites
  • 1 ½ C Pioneer® Sugar
  • ½ tsp cream of tartar
  • ½ tsp vanilla

Directions

  1. Preheat oven to 400° F.
  2. Crust: Combine cracker crumbs, butter and Pioneer® Sugar together. Press over bottom and up sides of 9-inch pie plate. Bake 10 minutes.
  3. Filling: Stir together Pioneer® Sugar, cornstarch and salt in 2-quart saucepan. In a separate bowl combine egg yolks and half and half; blend. Gradually pour into the sugar mixture.
  4. Cook over medium heat, stirring often until mixture comes to a boil. Continue to boil for 1 minute, stirring constantly. Remove from heat, stir in butter and vanilla.
  5. Add the chocolate chips and stir until melted. Pour into prepared pie shell. Chill until firm, about an hour. (Place in freezer for faster chilling).
  6. Topping: Combine the water and gelatin in a large saucepan; let sit 3 minutes. Add egg whites, Pioneer® Sugar, cream of tartar and vanilla. Heat over low for 7 minutes, beating the entire time until thick and fluffy. Let cool a few minutes, then swirl on top of the cooled pie.
  7. Garnish with chocolate curls and graham cracker crumbs, if desired.
