Rhubarb Upside Down Cake

Ingredients

  • 2 T butter or margarine
  • 5 C rhubarb, diced
  • 1 C Pioneer® Sugar
  • 1 pkg. (3 oz.) strawberry gelatin
  • 3 C miniature marshmallows
  • 1 pkg. white cake mix

Directions

  1. Preheat oven to 350° F. Spread butter in bottom of 9 x 13-inch baking pan. Spread the rhubarb in an even layer on the bottom of the pan. Sprinkle rhubarb with Pioneer® Sugar and strawberry gelatin powder. Cover with an even layer of miniature marshmallows; set aside.
  2. In a large mixing bowl prepare the cake mix according to package instructions. Gently pour over marshmallow layer.
  3. Bake for 50 to 60 minutes or until a toothpick inserted in the middle comes out clean.
