Porcupine Meatballs

Ingredients

  • ½ C long grain rice, uncooked
  • ½ C water
  • ⅓ C onion, chopped
  • 1 tsp. salt
  • ½ tsp. celery salt
  • ⅛ tsp. pepper
  • ⅛ tsp. garlic powder
  • 1 lb. ground beef
  • 2 T canola oil
  • 1 can (15 oz.) tomato sauce
  • 1 C water
  • 2 T Pioneer® Golden Light Brown Sugar
  • 2 tsp. Worcestershire sauce

Directions

  1. In a bowl, combine the rice, water, onion, salt, celery salt, pepper and garlic powder. Add the ground beef and mix well with hands. Shape into 1 ½-inch balls.
  2. In a large skillet, brown meatballs in oil and drain. Combine tomato sauce, water, Pioneer® Golden Light Brown Sugar and Worcestershire sauce and pour over meatballs. Reduce heat, cover and simmer for 1 hour.
