Pioneer Sugarbeet Cookies

Ingredients

  • ¾ C butter, softened
  • 1 C Pioneer® Sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 ½ C flour
  • 1 tsp. baking powder
  • ½ tsp. salt

Frosting:

  • ¾ C Pioneer® Confectioners Powdered Sugar
  • 1 T butter, softened
  • 1 T milk
  • 1 tsp. vanilla
  • green food coloring

Directions

  1. In a mixing bowl cream together butter, Pioneer® Sugar, eggs and vanilla. In a separate bowl sift together flour, baking powder and salt. Gradually beat in flour mixture to creamed mixture until blended. Cover lightly and chill for 2 hours.
  2. Preheat oven to 400° F.
  3. On a lightly floured surface roll out dough and use Pioneer® Sugarbeet cookie cutter to cut out cookies. Place on ungreased baking sheet and bake for 6-8 minutes. Remove and let cool on wire rack.

Frosting:

  1. In a mixing bowl beat together Pioneer® Confectioners Powdered Sugar, butter, milk and vanilla until smooth. Remove about a quarter of the frosting to another bowl and add a couple of drops food coloring; mix until blended. Add another drop or two until you get the color you want.
  2. Spread the top part of the cookie with the green frosting (like leaves) and use the rest of the white for the bottom part of the cookie. Take a bite and shout ‘I LOVE PIONEER SUGAR’.
