Pecan Surprise Bars

Ingredients

Crust:

  • 1 pkg. butter-flavored cake mix with pudding
  • ⅓ C butter or margarine, softened
  • 1 egg

Filling:

  • Reserved cake mix
  • ½ C Pioneer® Golden Light Brown Sugar, firmly packed
  • 1 ½ C dark corn syrup
  • 1 tsp. vanilla
  • 3 eggs
  • 1 C pecans, chopped

Directions

  1. Preheat oven to 350° F. Grease a 9 x 13-inch baking pan; set aside.
  2. Reserve ⅔ cup of the dry cake mix for filling.
  3. In a large bowl combine remaining dry cake mix, butter and egg; beat on low speed until well mixed. Press in bottom of prepared pan.
  4. Bake for 15 to 20 minutes or until light golden brown.

Filling Directions:

  1. Meanwhile, in a large bowl, combine reserved ⅔-cup dry cake mix, Pioneer® Golden Light Brown Sugar, corn syrup, vanilla and eggs; beat at low speed until moistened.
  2. Beat for 1 minute more at medium speed or until well blended. Pour filling mixture over warm base; sprinkle with pecans.
  3. Return to oven; bake an additional 30 to 35 minutes or until filling is set.
  4. Cool 45 minutes or until completely cooled. Cut into bars. Store in refrigerator.
