Pecan Pie Bars

Crust Ingredients

  • 2 C all-purpose flour
  • ½ C Pioneer® Sugar
  • ¼ tsp salt
  • ¾ C cold butter, cubed

Filling:

  • ½ C Pioneer® Golden Light Brown Sugar, firmly packed
  • ½ C Pioneer® Sugar
  • 1 C light corn syrup
  • ½ C butter
  • 4 LG eggs, lightly beaten
  • 2 ½ C pecans, finely chopped
  • 1 tsp vanilla extract

Crust Directions

  1. Preheat oven to 350° F. Spray a 9×13-inch baking pan with cooking spray; set aside.
  2. In a large bowl, combine flour, Pioneer® Sugar and salt. Cut in the cubed butter with a pastry blender until mixture resembles very fine crumbs. Press mixture evenly into prepared pan. Bake for 17 – 20 minutes or until lightly browned.

Filling Directions:

  1. While the crust bakes, beat eggs lightly in a small bowl; set aside.
  2. Combine Pioneer® brown and white sugar, corn syrup and butter in a saucepan. Bring to a boil over medium heat, stirring gently. Once the filling is brought to a boil, remove from heat. While stirring eggs briskly, slowly pour about one cup of hot mixture into beaten eggs. Stir the tempered egg mixture into the remaining hot filling mixture. Stir in pecans and vanilla; mix well.
  3. Remove crust from oven and pour filling over crust. Bake for 35 minutes or until set. Cool completely in pan on a wire rack. Cut into bars. These are very rich, so small squares are a perfect sweet bite. Perfect for holiday parties
 

Optional

Top with a small amount of whipped cream or butter-cream frosting after cutting into bars for an added festive touch!
