Oatmeal Cookie Pie

Ingredients

  • 1 rolled refrigerated pie crust
  • 3 eggs
  • 1 C light corn syrup
  • ½ C Pioneer® Golden Light Brown Sugar, packed
  • 3 T melted butter
  • 1 C quick cooking oats
  • 1 T flour
  • ½ tsp salt
  • ½ tsp cinnamon
  • ¾ C golden raisins
  • ½ C pecans, chopped
  • ¾ C butterscotch chips

Directions

  1. Preheat oven to 3250 F.  Unfold crust into a 9-inch deep pie plate.
  2. In a large bowl beat together eggs, corn syrup, Pioneer® Golden Light Brown Sugar and butter.  Add remaining ingredients and mix well.
  3. Pour into the crust, place pie on a baking sheet.
  4. Bake for 55 to 60 minutes or until the top is golden brown and is set in the center.  Cool.  Garnish with whipped cream and caramel sauce.
