My Mom’s Best Apple Cake

Cake Ingredients

  • 1 C vegetable oil
  • 2 C Pioneer® Sugar
  • 3 LG eggs
  • 1 ¼ tsp vanilla
  • 2 C flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 C Michigan Northern Spy, Red Rome, Ida Red or Jonagold apples, peeled, cored and diced
  • 1 C walnuts, chopped
  • 1 T flour

Frosting:

  • ½ C butter
  • 1 C Pioneer® Golden Light Brown Sugar, firmly packed
  • ¼ C whole milk

Directions

  1. Preheat oven to 350° F. Grease a 9 x 13-inch baking pan; set aside.
  2. In a bowl beat vegetable oil, Pioneer® Sugar, eggs, and vanilla with an electric mixer for 3 minutes or until well blended.
  3. Sift together flour, salt, and baking soda. Gradually add dry ingredients to wet mixture, beating well after each addition. Stir in Michigan apples.
  4. Combine walnuts and flour; add to cake batter. Pour into prepared pan.
  5. Bake for 1 hour or until cake tests done. Cool in pan on rack.

Frosting Directions:

  1. In a saucepan combine butter, Pioneer® Golden Light Brown Sugar, and milk. Cook over medium heat, stirring constantly, until mixture boils. Boil for 3 minutes. Remove from heat; spread at once on cooled cake.
