Mandarin Orange Salad

Ingredients

  • 60 Ritz® crackers, crushed
  • 1 stick oleo, melted
  • ¼ C Pioneer® Sugar
  • 8 oz. orange juice concentrate, thawed
  • 1 can Eagle® Brand milk
  • 1 tub Cool Whip®
  • 2 small cans mandarin oranges, drained

Directions

  1. In medium bowl crush crackers, add butter and Pioneer® Sugar. Press mixture into a 9 x 13-inch glass dish. {Reserve some crumbs for garnish.}
  2. In large bowl blend orange juice and milk, fold in the Cool Whip gently. Add the oranges and blend until just mixed through. Pour mixture gently over the crust. Top with reserved crumbs. Refrigerate until ready to serve.
 

Cook's Note

Salad can be frozen to use later, be sure to thaw in refrigerate to soften before serving.
