Luscious Apple-Cake-Pecan-Pie Fusion

Apple Pie Batter Ingredients

  • 3 C Michigan Northern Spy and Ida Red apples; peeled, cubed
  • ½ C Pioneer® Sugar
  • ½ C Pioneer® Golden Light Brown Sugar
  • ½ C melted cold-pressed, virgin coconut oil
  • 1 LG egg, beaten
  • 1 C unbleached flour
  • ¾ tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon

Pecan Pie Filling:

  • 2 LG eggs, beaten
  • 1 C Pioneer® Golden Light Brown Sugar
  • ½ C Pioneer® Sugar
  • 1 T unbleached flour
  • 2 T milk
  • 1 tsp vanilla
  • ½ C cold-pressed, virgin coconut oil
  • 1 ½ C pecan halves

Topping:

  • 1 C whipping cream, chilled
  • 1 T Pioneer® Sugar

Directions

  1. Heat oven to 350 F. Grease a large 9 ½ to 10-inch pie dish.
  2. Place cubed Michigan apples in pie dish.
  3. Mix Pioneer® Sugar and Pioneer® Golden Light Brown Sugar together in a large bowl. Add coconut oil, egg, flour, baking soda, salt and cinnamon. Mix well and pour over apples. Blend the mixture evenly, the batter will be thick.

Pecan Pie Filling Directions:

  1. Cream eggs with Pioneer® Golden Light Brown Sugar and Pioneer® Sugar in a food processor. Add flour, milk, vanilla and coconut oil. Process well.
  2. Spread the mixture on top of the apple batter. Arrange pecans on top and bake for about 35 to 40 minutes or until pecans become light brown.
  3. Whip cream and Pioneer® Sugar together. Place a dollop of cream on each serving.
