Lemony Grilled Flank Steak

Ingredients

  • 1 beef flank steak (1 ½ lbs.) or beef top sirloin steak
  • 1 tsp lemon zest
  • ½ C lemon juice
  • 2 T Pioneer® Sugar
  • 2 T soy sauce
  • 2 tsp fresh oregano or ½ tsp dried
  • ⅛ tsp pepper
  • Lemon slices (optional)

Directions

  1. Trim fat from steak. Score both sides of steak in a diamond pattern. Place steak in a plastic bag set in a shallow dish; set aside.
  2. Prepare the marinade in a small bowl by adding the lemon zest, lemon juice, Pioneer® Sugar, soy sauce, oregano and pepper. Pour over the steak; seal the bag. Marinate in the refrigerator for 2 to 24 hours, turning the bag occasionally.
  3. Drain the steak, reserving the marinade.

Charcoal grilling:

  1. Grill steak on the rack of an uncovered grill directly over medium coals until preferred done, turning and brushing once with the marinade halfway through grilling. (Allow 12 to 14 minutes for medium).

Gas grilling:

  1. Preheat grill. Reduce heat to medium. Place steak on grill rack over heat. Cover and grill as above.
  2. To serve, thinly slice steak diagonally across the grain. If desired, garnish with lemon slices and additional fresh oregano.
