Kelly’s Blueberry Bread

Ingredients

  • 2 C flour
  • 1 C Pioneer® Sugar
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 2 T shortening
  • 1 egg, beaten
  • boiling water (approx. ⅔ cup)
  • ⅓ C orange juice
  • 1 C fresh Michigan Blueberries (or thawed will do)
  • ½ C walnuts, chopped (optional)

Directions

  1. Preheat oven to 350° F and grease a 9 x 5-inch loaf pan; set aside.
  2. Mix flour, Pioneer® Sugar, baking powder, baking soda and salt together in a large bowl until well blended. Blend in shortening. Stir in beaten egg. Next, add enough boiling water to the orange juice to measure 1 full cup. Add this to the other ingredients and stir well. Finally, add the blueberries and nuts (if desired) and stir gently. Pour batter into prepared pan and bake for 60 minutes. Cool slightly before removing from pan. ENJOY!
