Hot Zesty Corn Appetizer

Ingredients

  • 2 cans whole corn, drained
  • ½ C celery, chopped
  • ½ C green onions, sliced
  • ¾ C mayonnaise
  • ¾ C sour cream
  • 4 C pepper jack cheese, grated
  • 1 bag (9 ¼ oz.) chili cheese Fritos
  • additional sour cream for topping

Directions

  1. Preheat oven to 350° F. Spray an 8 x 8-inch baking dish with non-stick cooking spray; set aside.
  2. Drain corn and place in a large mixing bowl. Stir in the celery, green onions, mayonnaise, sour cream and cheese. Stir until everything is mixed well. Pour mixture into prepared dish.
  3. Bake for 30 – 35 minutes. Remove from the oven and top with coarsely broken Fritos and dollop of sour cream.
 

Cooks Note

This makes a great appetizer, use the scoop corn chips or Fritos when serving.
