Homemade Granola

Ingredients

  • ¾ C canola oil
  • 1 C Pioneer® Golden Light Brown Sugar
  • ½ C honey
  • ¾ C pecan pieces
  • 1 C almond slices
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • Pinch ground allspice
  • ¾ C sweetened, flaked coconut
  • 3 C old fashioned oats (do not use quick)
  • 1 C dried cranberries
  • ½ C golden raisins (or regular); optional

Directions

  1. Preheat oven to 350° F. Line a cookie sheet with parchment paper; set aside.
  2. Combine canola oil, sugar and honey in a sauce pan. Cook over medium heat to boil; reduce heat and simmer for 5-7 minutes until combined; set aside.
  3. Combine pecans, almonds, cinnamon, nutmeg, allspice, coconut and old fashioned oats together in a bowl; stir. Pour sugar mixture over oat mixture – gently stirring to coat as many oats as possible. Spread the mixture evenly over prepared pan, not more than 1/2-inch thick.
  4. Bake for 8-10 minutes or until well toasted. Stir the granola several times during baking so that it cooks evenly. Remove from oven and let cool. Place in a large stainless steel bowl and stir in cranberries and raisins. Store in plastic bowl.
