Holiday Stollen Bread

Ingredients

  • 1 C milk
  • ¾ C butter
  • ½ C Pioneer® Sugar
  • 2 pkg. dry yeast
  • 4 ¾ C all-purpose flour, divided
  • 2 eggs, well beaten
  • ½ tsp salt
  • lemon zest from ½ lemon
  • ¾ C seedless raisins
  • ¾ C blanched almonds or pecans, chopped
  • 1 C candied fruit, chopped
  • ½ C nuts, chopped
  • 1 ½ T light rum

Directions

  1. Scald milk, add butter and Pioneer® Sugar. Cool mixture to lukewarm. Dissolve yeast in ¼ cup of the scalded milk mixture with 1 tsp sugar. Add back to the original mixture. Stir in 1 ½ cups flour and beat until smooth. Let stand in a warm place until bubbly.
  2. In a separate bowl add eggs, salt and zest; mix well. Mix in raisins, almonds, fruit, other nuts and rum. Add mixture to the dough. Add 1 cup flour and mix until smooth. Add remaining flour half a cup at a time and mix well.
  3. Turn out onto a floured board and knead dough until smooth and elastic. Put into a greased bowl, cover with a towel and let rise (about 1 hour) or until doubled. Punch down the dough and divide into two portions. Knead each into loaves, place into buttered tins and let rise until doubled.
  4. Preheat oven to 350° F. Bake the loaves for 45 minutes. Brush with melted butter or frost with powdered sugar icing.
