Cake Ingredients

  • 3 C Pioneer® Sugar
  • 2 ¼ + 2 T flour
  • 1 C + 2 T dark cocoa
  • 2 tsp baking soda
  • 1 ½ tsp baking powder
  • 1 ½ tsp salt
  • 1 ½ C buttermilk
  • 1 ½ C strong black coffee*
  • ¾ C oil
  • 3 LG eggs
  • 3 tsp pure vanilla extract

Filling:

  • 1 ¾ C ricotta cheese
  • ¼ C Pioneer® Sugar
  • 3 T Grand Marnier
  • ¼ C candied red cherries, chopped
  • ¼ C candied green cherries, chopped
  • ¼ C orange peel, chopped
  • 1/3 C semi-sweet chocolate mini chips

Frosting:

  • 1/3 C Pioneer® Confectioners Powdered Sugar
  • 2 T cocoa
  • 1 C heavy whipping cream, cold
  • 1 tsp vanilla

Vanilla Whipped Cream:

  • 1 C heavy whipping cream
  • ¼ C Pioneer® Confectioners Powdered Sugar candied red cherries
  • ½ tsp vanilla

Directions

  1. Preheat oven to 350° F. Grease and flour three 9-inch round pans; set aside.Cake: Stir together the Pioneer® Sugar, flour, cocoa, baking soda, baking powder and salt. Add the buttermilk, coffee, oil, eggs and vanilla; beat at medium speed for 2 minutes. Pour batter evenly into prepared pans. Bake 30-35 minutes or until done. Cool 10 minutes. Remove from pans and cool completely.

Filling:

  1. While the cake is baking, in a bowl combine ricotta cheese, Pioneer® Sugar, Grand Marnier, red & green cherries, orange peel and chocolate chips; set aside.

Frosting:

  1. Stir together Pioneer® Confectioners Powdered Sugar and cocoa. Add the whipping cream and vanilla; beat until stiff; set aside.

Vanilla Whipped Cream:

  1. Beat the whipping cream, Pioneer® Confectioners Powdered Sugar and vanilla until stiff; set aside.

Building your cake:

  1. Place one cake layer on a serving plate. Top with half the filling. Place on another layer and the rest of the filling. Place on the last cake layer. Frost the entire cake with the chocolate whipped cream. Pipe with vanilla whipped cream and garnish with candied cherries.
 

Cooks Note

To make strong black coffee, dissolve 3 tablespoons of instant coffee in 1 1/2 cups of hot water.
