Get Me to the Beach Brownies

Ingredients

  • 2 C flour
  • 1 tsp. salt
  • 2 ½ tsp. baking soda
  • ¾ C cocoa
  • 2 C Pioneer® Sugar
  • 2 eggs
  • 1 C buttermilk
  • 1 C vegetable oil
  • 1 tsp. almond extract
  • 4 C frozen tart cherries

Frosting:

  • 1 ½ C Pioneer® Sugar
  • 4 T cornstarch
  • ¼ tsp. salt
  • 3 squares semi-sweet chocolate
  • 1 ½ C hot water
  • 3 T butter
  • 1 tsp. vanilla

Directions

  1. Preheat oven to 350° F. Baking pan needed is an 11 x 13-inch pan.
  2. Sift flour, salt, baking soda, cocoa and Pioneer® Sugar together into a large bowl. Add eggs, buttermilk, oil and almond extract; mix until well blended.
  3. Spread frozen cherries over batter and bake for 35-40 minutes or until toothpick comes out clean.
  4. In the meantime, make the frosting and frost as soon as brownies come out of oven.

Frosting:

  1. Mix Pioneer® Sugar, cornstarch and salt in saucepan. Add chocolate and hot water. Cook until thick and glossy. Remove from heat and add butter and vanilla and stir until smooth. Immediately frost the brownies. Wait until brownies cool to cut. Great for the beach.
