Fresh Hawaiian Blueberry Pie

Ingredients

Crust:

  • 1 ¼ C chocolate wafer crumbs
  • ½ C Pioneer® Sugar
  • ½ C macadamia nuts, finely chopped
  • ⅓ C butter, melted

Filling:

  • 1 C half & half
  • 1 tsp. vanilla
  • 3 T Pioneer® Sugar
  • 2 T cornstarch
  • 3 egg yolks
  • 1 T butter
  • 4 oz. dark chocolate, chopped
  • 2 T white créme de cacao
  • 2 T blueberry schnapps
  • 1 C whipping cream
  • 1 qt. fresh blueberries

Topping:

  • ¾ C whipping cream
  • ¼ C macadamia nuts, finely chopped
  • 2 T Pioneer® Confectioners Powdered Sugar

Directions

  1. Preheat oven to 350° F.

Crust:

  1. Combine chocolate wafer crumbs, Pioneer® Sugar and nuts together. Add melted butter and press into the bottom and sides of a 9-inch pie pan. Bake for 9 minutes. Remove and let cool.

Filling:

  1. Bring half & half to a boil in a heavy saucepan, add vanilla. Combine the Pioneer® Sugar and cornstarch. Add egg yolks and stir. Gradually add sugar mixture to hot mixture. Cook over medium heat, stirring constantly until mixture comes to a boil. Boil for 1 minute longer. Remove from heat and add the butter and chopped chocolate. Stir until chocolate melts. Add liqueurs and stir until smooth.
  2. Beat whipping cream until soft peaks form. Gently fold into chocolate mixture. Spread a thin layer of chocolate filling into the bottom of prepared crust. Reserving 6 blueberries, place a layer of blueberries on top of this. Repeat until all blueberries are gone and you end up with chocolate filling on top. Chill.

Topping:

  1. Whip cream until soft peaks form. Beat in Pioneer® Confectioners Powdered Sugar. Pipe over cooled pie and sprinkle with chopped macadamia nuts and reserved blueberries.
