Snowflake Cookies

Ingredients

  • 2 C Pioneer® Sugar
  • 1 C sour cream
  • 3 eggs
  • 1 C butter, softened
  • 5 ½ C flour
  • 2 tsp. baking soda
  • 2 T lemon zest
  • 2 tsp. baking powder
  • 1 tsp. vanilla
  • ¼ tsp. salt

Royal Icing:

  • 3 T powdered egg whites
  • ½ C warm water
  • pinch cream of tartar
  • 4 C Pioneer® Confectioners Powdered Sugar

Directions

  1. In a large bowl combine Pioneer® Sugar, sour cream, eggs and butter. Beat until light and fluffy. Add flour, baking soda, zest, baking powder, vanilla and salt; beat only until well mixed. Cover and chill until firm, about 1-2 hours.
  2. Preheat oven to 350° F.
  3. On a lightly floured surface, roll out dough to about ¼-inch thick. Cut with your favorite snowflake cookie cutter.
  4. Bake for 8-10 minutes, or until lightly browned. Cool completely. While cookies are cooling make your royal icing.

Royal Icing:

  1. Beat egg whites, water and cream of tartar. Add Pioneer® Confectioners Powdered Sugar in small amounts; beat at medium speed until blended. Turn on high and beat for 5 minutes.
  2. Put icing in piping bag and decorate your cookies. Sprinkle with sanding sugar or white and blue sugar. Each one will look different, just like real snowflakes. Enjoy!
