Festive Marzipan-Apricot Bars

Ingredients

Crust:

  • 1 ½ C flour
  • ½ C Pioneer® Sugar
  • ¾ C cold butter (no substitutes), cut up

Marzipan Filling:

  • 1 can (7-8 oz.) almond paste, crumbled
  • ½ C Pioneer® Sugar
  • 4 T butter, softened (no substitutes)
  • ¼ tsp. salt
  • 2 LG eggs
  • 2 tsp. vanilla
  • ¼ C all-purpose flour

Jam layer:

  • 1 C apricot jam (or peach)
  • ⅓ C sliced almonds

Directions

  1. Preheat oven to 375° F. Grease a 9 x 13-inch metal baking pan. Line pan with non-stick foil; set aside.

Crust:

  1. In a medium bowl stir flour with Pioneer® Sugar. With a pastry blender cut in butter until mixture resembles fine crumbs. Press crumbs on bottom of pan to form crust. Bake 16-18 minutes or until light golden. Remove from oven and cool on wire rack.

Marzipan Filling:

  1. In a large bowl, beat on low speed, almond paste, Pioneer® Sugar, butter and salt until crumbly. Increase speed to medium and beat until well combined, scraping bowl frequently with rubber spatula (some tiny lumps of almond paste will remain). Beat in eggs and vanilla until smooth. Beat in flour just until combined.
  2. Spread jam over cooled crust in pan. Carefully pour almond-paste mixture over jam, spreading with back of teaspoon if necessary. Sprinkle top with almonds. Bake 30 minutes or until top is light golden. Cool completely in pan on wire rack. When cool, transfer bars with foil to cutting board and cut into 2-inch squares.
