Fall Favorite Pumpkin Bars

Ingredients

  • 4 eggs, well beaten
  • 2 C cooked pumpkin or 1 lb. can
  • 1 ½ C Pioneer® Sugar
  • ¼ tsp. salt
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • ½ tsp. cloves (or substitute 2 ½ tsp. pumpkin pie spice for the ginger, cinnamon and cloves)
  • 1 yellow cake mix
  • ½ C butter, melted
  • 1 C chopped pecans

Directions

  1. Preheat oven to 325° F. Lightly spray a 9 x 13-inch baking dish with cooking spray; set aside.  
  2. Mix the eggs, pumpkin, Pioneer® Sugar, salt, ginger, cinnamon and cloves together in a large mixing bowl. Pour mixture into prepared baking dish.  
  3. Sprinkle the dry cake mix over the top. Drizzle with the melted butter and top with the pecans.  
  4. Bake for 1 hour 20 minutes.
