Fabulous Fall Pumpkin Delight

Crust Ingredients

  • 1 box yellow cake mix (reserving 1 cup)
  • ½ C margarine
  • 1 egg

Filling:

  • 3 C pumpkin pie filling
  • 2 eggs
  • 2/3 C evaporated milk
  • ¼ C Pioneer® Sugar

Topping:

  • ¼ C margarine
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • ½ C pecans or walnuts, chopped

Directions

  1. Preheat oven to 350° F.
  2. Crust: Mix the cake mix, margarine and egg until crumbly. Pat into a 9 x 13-inch baking dish, smoothing to the edges.
  3. Filling: mix pumpkin pie filling with eggs, evaporated milk and Pioneer® Sugar. Blend until all is smooth. Pour over crust.
  4. Topping: With the reserved cake mix add margarine, cinnamon, spice and nuts. Sprinkle on top of filling.
  5. Bake for 1 hour or until tester comes out clean. Top with whipped cream if desired.
