Date Cake with Coconut Topping

Ingredients

  • 1 ½ C hot water
  • 2 C dates, finely chopped
  • 3/8 C shortening
  • 1 ½ C Pioneer® Sugar
  • 2 small eggs
  • 1 ½ tsp vanilla
  • 2 ½ C flour
  • 1 ½ tsp baking soda
  • ¾ C nuts, chopped

Topping:

  • ¾ C chocolate chips
  • 2 ½ T Pioneer® Sugar
  • ¾ C nuts, chopped

Directions

  1. Preheat oven to 350° F. Grease a 9 x 13-inch baking pan; set aside.
  2. In a bowl or saucepan, pour the hot water over the dates and let cool!
  3. Combine the shortening, Pioneer® Sugar, eggs and vanilla, beat 5 minutes at high speed until fluffy.
  4. Sift together the flour, soda and salt. On low speed, alternately add in flour and the dates into the sugar mixture. Blend just until smooth. Add the nuts and pour into prepared pan.

Topping:

  1. Mix together chocolate chips, Pioneer® Sugar and nuts. Sprinkle over the top of the cake. Bake for 40-45 minutes.
