Dark Chocolate Pumpkin Truffles

Ingredients

  • 1/3 C cookie crumbs
  • ¼ C canned pumpkin puree
  • ¼ C graham cracker crumbs, plus more for garnish
  • 1 T Pioneer® Confectioners Powder Sugar, plus more for garnish
  • ½ tsp. orange zest
  • 1/8 tsp. ground cinnamon
  • Pinch of salt
  • 2 oz. cream cheese, softened
  • 2 C dark chocolate chips

Directions

  1. In a large mixing bowl add cookie crumbs, pumpkin, graham cracker crumbs, Pioneer® Confectioners Powder Sugar, orange zest, cinnamon, salt and cream cheese. Beat with an electric mixer until smooth. Transfer to a shallow bowl, cover and chill until just solid enough to roll into balls; about 2 hours.
  2. Line a large sheet tray with parchment paper. Roll 1 heaping teaspoon of the pumpkin mixture into a ball in your hands. Place back onto sheet. Continue until all pumpkin mixture is gone.
  3. Melt chocolate in microwave for approximately 1 minute; stir until smooth. Transfer to a small, deep bowl. Working quickly, add a truffle to the chocolate and gently spoon chocolate over to coat. Using a small spoon or fork, lift the truffle out of the chocolate, shake off excess and transfer to back to the prepared tray.
  4. Garnish: Sprinkle powder sugar over truffles and finish with dusting of graham cracker crumbs over the top, if desired. Repeat with remaining truffles. Chill garnished truffles until chocolate is completely set, about 1 hour.
