Croqué Monsieur with Apple-Cranberry Chutney

Apple-Cranberry Chutney Ingredients

  • 4 Michigan Gala apples, peeled, cored & diced to ½-inch
  • ½ C chopped yellow onion
  • 1 tsp. minced fresh ginger
  • juice of 1 orange
  • ¼ C apple cider vinegar
  • ½ C Pioneer® Golden Light Brown Sugar, packed
  • 1 tsp. whole mustard seeds
  • ¼ tsp. red pepper flakes
  • ½ tsp. salt
  • 1 ½ C fresh cranberries

Cheese Sauce:

  • 4 T unsalted butter
  • 4 T all-purpose flour
  • 4 tsp. Dijon mustard
  • ½ tsp. salt
  • ½ tsp. grated nutmeg
  • 1 C whole milk
  • 1 C spiced apple wine
  • ½ C shredded Grand Cru Surchoix cheese (may substitute gruyere)

Sandwich Ingredients:

  • 1 French bread, sliced – 12 slices ½-inch thick
  • 2 T unsalted butter, room temperature
  • 1 C shredded Gran Cur Surchoix cheese
  • 12 oz. thinly sliced ham
  • Fresh chives, chopped

Chutney Directions

  1. Combine all the ingredients together except the cranberries in a large saucepan over medium-high heat. Bring to a boil stirring occasionally for 40 minutes until most of the liquid evaporates. Add the cranberries and cook for 10 more minutes, remove from heat and let cool.

Cheese Sauce Directions:

  1. In a small saucepan, melt the butter over medium heat. Add the flour and cook whisking for 1 minute to a bubbly smooth paste. Stir in the mustard, salt & nutmeg, then slowly whisk in the milk and wine.
  2. Cook whisking until the sauce comes to a boil and thickens, about 3-4 minutes. Remove the pan from the heat and stir in the shredded cheese until melted.
  3. Keep warm until ready to build sandwiches.

Sandwich Assembly:

  1. Lightly spread butter on both sides of all the bread slices. Place in a preheated oven at 400° F to crisp for a couple of minutes; remove. Lay out 6 slices of bread and starting with the ham followed by the shredded cheese, divide evenly.
  2. Place in oven without the top for 4 minutes or until cheese melts; remove.
  3. On the remaining slices spread 2-3 tablespoons of chutney (depending on bread size) and place over the melted cheese, repeat for a 6 sandwiches. Pour the warm cheese sauce onto the top of the sandwich so that it runs down the sides. Place in oven until bubbly and beginning to brown (5-10 minutes). Or you may broil for a few seconds if you’re not getting the brown you want. Sprinkle with chopped chives and serve.
