Ingredients

Bottom Layer:

  • ½ C butter or margarine
  • ½ C cocoa
  • ¼ C egg substitute, beaten
  • ½ C Pioneer® Confectioners Powdered Sugar
  • 1 tsp. vanilla
  • 2 C graham cracker crumbs

Middle Layer:

  • ½ C butter or margarine
  • ⅓ C green creme de menthe
  • 3 C Pioneer® Confectioners Powdered Sugar

Top Layer:

  • ⅓ C butter or margarine
  • 2 C semi-sweet chocolate chips

Directions

Bottom Layer:

  1. Combine butter and cocoa in saucepan. Heat and stir until blended. Beat in egg substitute. Remove from heat. Add Pioneer® Confectioners Powdered Sugar and vanilla to cocoa mixture. Stir in graham cracker crumbs and mix well. Press into bottom of ungreased 9 x 13-inch baking pan.

Middle Layer:

  1. Melt butter. In a small bowl, combine melted butter and creme de menthe. On low speed of an electric mixer, beat in Pioneer® Confectioners Powdered Sugar until smooth. Spread this over the bottom layer and chill for one hour.

Top Layer:

  1. Combine butter and chocolate chips in a small saucepan over low heat. Stir until melted. Spread over mint layer and chill for two hours. Cut into small squares and store in refrigerator.
