Cranberry Chip Cookies

Ingredients

  • 1 C Pioneer® Sugar
  • ¾ C Pioneer® Golden Light Brown Sugar, packed
  • ½ C butter or margarine, softened
  • ¼ C milk
  • 2 T orange juice
  • 1 egg
  • 3 C all-purposed flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ¼ tsp. baking soda
  • 2 ½ C cranberries, coarsely chopped
  • 1 C pistachio nuts, chopped
  • ½ C semisweet chocolate chips

Chocolate Glaze:

  • ½ C semisweet chocolate chips
  • 2 T butter or margarine
  • 2 T corn syrup
  • 1-2 T hot water

Directions

  1. Mix both Pioneer® sugars with butter in a large bowl. Stir in milk, orange juice and egg. Stir in flour, baking powder, salt and baking soda. Carefully stir in cranberries, nuts and chocolate chips. Divide dough in half. Shape into two rolls. Wrap in wax paper and put in refrigerator overnight.
  2. Preheat oven to 350° F. Grease cookie sheet; set aside.
  3. Slice ¼-inch of cookie dough roll from one of the chilled rolls. Place on prepared cookie sheet and bake 10-15 minutes. Cool on wire rack.

Chocolate Glaze:

  1. Heat chocolate chips, butter and corn syrup over low heat, stirring constantly until the chocolate chips are melted. Cool slightly. Stir in water one teaspoon at a time until consistency of thick syrup. Drizzle over cooled cookies.
