Coconut Pancakes

Ingredients

  • 4 eggs
  • 3 T oil
  • ¼ C milk
  • ¼ C organic coconut flour
  • 1 T Pioneer® Sugar
  • ¼ tsp. salt
  • ¼ tsp. baking powder

Directions

  1. Preheat a skillet to medium or medium-high heat.
  2. In a large bowl whisk together eggs, oil and milk until well combined.
  3. In a separate bowl sift coconut flour, Pioneer® Sugar, salt and baking powder together. Add dry mixture to wet mixture and thoroughly mix until there are no lumps.
  4. Ladle 2 tablespoons to 1/4 cup of batter per pancake onto hot skillet. Cook until bubbles begin to form on the top, about 4 minutes, then flip and cook on the second side until done.
