Cinnamon Biscuits

Ingredients

  • 2 C all-purpose flour, sifted
  • 1 T baking powder
  • 1 tsp. salt
  • ¼ tsp. baking soda
  • ¼ C vegetable oil
  • ¾ C buttermilk
  • 8 T butter, softened
  • ¾ C Pioneer® Sugar
  • 1 tsp. cinnamon
  • 1 C milk, optional

Directions

  1. Preheat oven to 400° F. Grease a 9-inch round baking pan lightly; set aside.
  2. Combine flour, baking powder, salt and baking soda in a medium mixing bowl and mix. Stir in vegetable oil. Add buttermilk and mix just until blended.
  3. On a lightly floured surface, knead dough until smooth. Roll dough into a 15 x 8-inch rectangle. Spread butter over the dough.
  4. Combine Pioneer® Sugar and cinnamon in a small bowl and mix well. Sprinkle over butter. Roll up rectangle, jellyroll fashion, starting from one long side. Pinch seam to seal. Cut the roll into 1 to 1 ½-inch slices. Arrange the slices, cut side up, in prepared baking pan. Bake until lightly browned, about 15 to 20 minutes. Pour milk over the top if desired. Serve warm.
