Chocolate Mousse Fudge Pie

Ingredients

  • 3 LG eggs
  • 1 C Pioneer® Sugar
  • 1/3 C butter, melted
  • 1/3 C unsweetened cocoa powder
  • ¼ C flour
  • 1/8 tsp. salt
  • 1 tsp. vanilla extract
  • ½ C chopped pecans
  • 1 pkg. milk chocolate mousse mix
  • 2/3 C milk
  • whipped topping; optional

Chocolate Syrup:

  • 2 oz. unsweetened chocolate
  • ¾ C Pioneer® Sugar
  • 1 C evaporated milk
  • 2 T butter
  • 1 tsp. vanilla extract
 

Directions

  1. Preheat oven to 350° F. Lightly grease a 9-inch pie plate; set aside.
  2. Whisk together the eggs and Pioneer® Sugar in a large bowl. Add the butter, cocoa powder, flour, salt and vanilla, stirring until blended. Stir in the pecans, and spoon into prepared pan.
  3. Bake for 30 minutes (mixture will rise, and then fall as it cools).
  4. Prepare mousse by mixing with milk until it thickens (about 2 minutes). Spread mousse over cooled pie. Serve with chocolate sauce (and with an optional scoop of ice cream).

Chocolate Syrup:

  1. Melt the chocolate in a heavy saucepan over low heat. Stir in the Pioneer® Sugar until smooth. Gradually add the milk. Bring to a boil, stirring constantly. Boil for 6 minutes. Remove from the heat, and stir in the butter and vanilla.
  2. Store in refrigerator up to 3 weeks. Serve over pie.
