Ingredients

  • ⅔ C unsalted butter, softened
  • ½ C Pioneer® Golden Light Brown Sugar, packed
  • ½ C Pioneer® Sugar
  • ¼ C milk
  • 1 egg
  • ¾ C baking cocoa, sifted
  • ½ tsp. baking soda
  • 2 C all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. salt

Filling:

  • 2 ¾ C Pioneer® Confectioners Powdered Sugar
  • ¼ tsp. peppermint extract
  • ¼ tsp. salt
  • ¼ C half-and-half cream
  • Green food coloring

Directions

  1. In a mixing bowl, cream together the butter, Pioneer® Golden Light Brown Sugar and Pioneer® Sugar. Add milk and egg; mix well.
  2. In a separate bowl combine cocoa, baking soda, flour, baking powder and salt; gradually add to creamed mixture and mix well. Cover and chill for 2 hours or until firm.
  3. Preheat oven to 375° F. Grease a baking sheet; set aside.
  4. Roll chilled dough on a floured surface to ⅛-inch thickness. Cut with a 1-½ inch scalloped cookie cutter and place 1-inch apart on prepared baking sheet. Bake for 5-6 minutes or until the edges are lightly browned. Remove to wire racks to cool completely.

Filling:

  1. In a mixing bowl add Pioneer® Confectioners Powdered Sugar, peppermint extract, salt, cream and food coloring; mix well. Spread on one cookie and top with another cookie to make sandwich.
