Chocolate Cherry Cheesecake Cookies

Ingredients

Cookie:

  • ½ C butter
  • 1 C Pioneer® Sugar
  • 2 eggs
  • 1 ½ tsp. vanilla
  • 1 ½ C flour
  • ½ C unsweetened cocoa
  • ¼ tsp. salt
  • ¼ tsp. baking powder
  • ¼ tsp. baking soda

Topping:

  • 1 C Pioneer® Confectioners Powdered Sugar
  • 2 T flour
  • 3 oz. cream cheese, softened
  • 1 tsp. vanilla
  • 1 jar (10 oz.) maraschino cherries, drained & chopped

Frosting:

  • ½ C semi-sweet chocolate chips
  • 2 T water
  • 2 T butter

Directions

  1. Preheat oven to 350° F.
  2. In a mixing bowl cream the butter, Pioneer® Sugar, eggs and vanilla together.
  3. In a separate large bowl sift together flour, cocoa, salt, baking powder and baking soda. Gradually add flour mixture to creamed mixture; mix well. Drop by teaspoonful onto ungreased baking sheet. Flatten with bottom of juice glass dipped in sugar. Bake for 8-10 minutes; remove and cool.

Topping:

  1. Sift together the Pioneer® Confectioners Powdered Sugar and flour. Beat in cream cheese. Add vanilla and blend. Stir in maraschino cherries. Spread about 1 teaspoonful onto each cookie.

Frosting:

  1. Combine chocolate chips, water and butter in a saucepan and heat over low-heat until morsels are melted. Stir to blend. (This can be done in a microwave). Spread about 1 teaspoonful over cream cheese mixture. Store cookies in refrigerator.
