Candy Cane Crush Cookies

Ingredients

  • 1 ¼ C peppermint candy (or candy canes),
  • 1 1/3 C Pioneer® Sugar, divided
  • 2 ½ C all-purpose flour
  • ¼ tsp salt
  • ¾ C butter
  • 2 eggs
  • ¾ tsp vanilla extract
  • 1 tsp peppermint extract
  • white chocolate chips, melted

Directions

  1. Preheat oven to 350° F.
  2. Grind or crush peppermint candy with 1/3 cup Pioneer® Sugar until candy pieces are to your liking – you can have small pieces of candy or crush until completely powdered. Spread on a flat surface (plate); set aside.
  3. Combine flour and salt together in a bowl; set aside.
  4. In a large bowl, cream together butter, eggs and remaining Pioneer® Sugar. Add in both the vanilla and peppermint extracts and blend thoroughly.
  5. Add flour mixture one-third at a time to butter mixture, mixing well each time.
  6. Form the dough into 1-inch balls. Roll the balls in the crushed candy mixture and place on an ungreased baking sheet.
  7. Bake for 8 minutes. Allow cookies to cool on the baking sheet for 1 minute, remove and roll them in the candy sugar again. Cool on wax paper.
  8. Optional:  Melt some white chocolate chips and drizzle on top of cookies while they cool.
