Buttershots Apple Cream Delight Pie

Crust Ingredients

  • 1½ C Nightingale pastry flour
  • 1 tsp salt
  • ½ tsp baking powder
  • ½ C + 1 T butter shortening
  • 5-6 T ice cold water

Filling:

  • 3 T unsalted butter
  • 1 C Pioneer® Golden Light Brown sugar, packed
  • ¼ C Dekuyper Buttershots (butterscotch schnapps)
  • 10 C Michigan Honey Crisp apples- peeled, cored and cubed
  • ½ C dates
  • 1 pkg. (8 oz.) cream cheese, softened
  • ½ C Pioneer® Confectioners Powdered Sugar
  • 2 C heavy whipping cream

Topping:

  • 2 Michigan apples, peeled, cored and cut into 8 wedges
  • 1 T butter
  • ¼ C Pioneer® Golden Light Brown Sugar
  • 1 C heavy whipping cream
  • ¼ C Pioneer® Confectioners Powdered Sugar
  • 1 tsp vanilla
  • Glazed pecans or walnut halves

Directions

  1. Preheat oven to 425° F.

Crust:

  1. In a bowl combine flour, salt and baking powder. Cut in shortening with fork until mixture is crumbly. Add water, small amounts at a time until dough ball forms. Roll out on lightly floured surface to fit 9” deep dish pie pan.
  2. Bake for 12-14 minutes or until golden brown. Cool before filling.

Filling:

  1. Melt butter in large skillet. Add Pioneer® Golden Light Brown Sugar, apples and butterscotch schnapps. Cook over medium heat until apples are fork tender. Remove from heat and add chopped dates. Cool mixture completely.
  2. Whip cream cheese and Pioneer® Confectioners Powdered Sugar together until creamy. Slowly add whipping cream to cream cheese mixture. Continue beating until soft peaks form. Gently fold cooled apple mixture into cream mixture; spoon mixture into cooled crust. Refrigerate until firm.

Topping:

  1. Sauté apple wedges in butter and Pioneer® Golden Light Brown Sugar until fork tender. Combine cream, sugar and vanilla in cooled bowl. With electric beater, beat until stiff peaks form. Pipe or spread on cooled pie. Garnish with sautéed apples and nuts.
