Broiled Orange Roughy

Ingredients

  • Olive oil
  • Juice from ½ lime
  • ¼ tsp. Pioneer® Sugar
  • 1 clove garlic, chopped
  • ½ tsp. oregano
  • ½ tsp. cayenne pepper
  • salt & pepper, to taste
  • 2 fresh orange roughy fillets
  • Italian bread crumbs

Directions

  1. Preheat broiler.
  2. Whisk olive oil and lime juice together; add Pioneer® Sugar, garlic, oregano, cayenne pepper, salt and pepper; mix well.
  3. Place orange roughy fillets in a baking dish. Pour half of the sauce over the fillets. Sprinkle breadcrumbs over the fish, covering lightly. Pour the remaining sauce over the breadcrumbs. Broil until the fillets flake.
