Blueberry Topping

Ingredients

  • 1 pint fresh blueberries or 2 cups frozen blueberries
  • ½ C water
  • ¼ C Pioneer® Sugar
  • 1 T fresh lemon juice
  • 1 T cornstarch
  • 2 T cold water

Directions

  1. In a medium saucepan over medium-high heat, bring blueberries, water, Pioneer® Sugar and lemon juice to a boil.
  2. In a cup, combine cornstarch and water. Add to blueberry mixture and cook over low heat 1 – 2 minutes more, stirring until thick and smooth. Serve hot or cold.
 

Cook's Note

If using fresh blueberries, reduce heat and simmer 1 – 2 minutes or until berries soften. If using frozen berries, there is no need to simmer.
