Blackberry Sorbet

Ingredients

  • 4 C blackberries
  • 2 ½ C water
  • 2 T lemon juice
  • ½ – 1 C Pioneer® Sugar

Directions

  1. Rinse the blackberries. Combine the berries in a blender with the water and lemon juice. Purée until smooth. Press the mixture through a sieve to remove the seeds.
  2. In a saucepan, add the blackberry juice and Pioneer® Sugar, whisk to blend together. Bring to a boil and reduce heat to a simmer. Let cook for 1 – 2 minutes or until the sugar is fully dissolved. Remove from heat and transfer to a container. Place in the refrigerator to chill completely.
  3. Freeze the sorbet mixture according to your ice cream maker’s directions, or if not using an ice cream maker; place the mixture in a shallow pan and freeze. Once frozen, break into pieces and purée in a blender or food processor until creamy.
  4. To serve, scoop sorbet into a glass and garnish with a sprig of mint.
